we've done what is kind of like a farm cheese. (Heat and add vinegar to separate) We have cultures for cheddars and stuff, but haven't gotten that into it yet. I saw one place that said you could take the whey from a first batch of cheese, add more milk and make mozzarella. We have a whole lot to try yet...LOL.
We have figured out though that if you make the farm cheese and add a bunch of finely chopped hot peppers it is awesome! I use it all the time with mexican dishes.
