what is briskit?

a cut of meat from the breast or lower chest especially of beef; the chest of an animal; the ribs and meat taken from the chest of an animal.

It is the same cut of beef that butchers use for corned beef or pastrami...the only difference is that corned beef is pickled and pastrami is peppered. 


And know that when you cook it (you can roast it or cook it on top of the stove as a pot roast) - it shrinks CONSIDERABLY!!  My mother, may she rest in peace, used to cook brisket in the oven with potatoes and carrots and onions for a long time.
