avocado sauce receipe.....sm
1 tbsp. oil 1/4 sm. onion 1 clove garlic, crushed 1 ripe avocado 1 tbsp. fresh chopped parsley 1 tbsp. lemon juice Salt and freshly ground pepper to taste
Heat the oil in a small pan and lightly fry the onion and garlic until soft. Scoop out flesh and mash well. Stir into the onion mixture and add the chopped parsley and lemon juice and season to taste. Heat the sauce, adding a little water if too thick. Serve the sauce hot with the fish, garnished with parsley and avocado slices
However, I use more than 1 avocado......*S*

1 (14 1/2-ounce) can chicken broth 1 tablespoon granulated sugar 2 tablespoons lemon juice 4 avocados, peeled and mashed 1 cup light sour cream 1/2 cup chopped fresh cilantro 1/2 teaspoon salt 1/2 teaspoon pepper
Bring first 3 ingredients to a boil in a small saucepan; cook until reduced to 3/4 cup. Cool slightly. Process broth mixture, avocado, and next 4 ingredients in a blender until smooth. Makes about 4 cups.
