When you open the symbols box, down on the bottom it has a tab for shortcut key. If you click on the first symbol, a key stroke is assigned already, alt control E, if you click on another there might not be one, but you can assign one. Or it gives you an autocorrect option. I have Word 2003. That's what mine has anyway.
