For my housewarming party, I made a brisket for the first time. I don't eat meat, but everyone loved it. Both briskets were gone in a couple of hours. I don't follow specific recipes, but I'll tell you the best I can. I first cut slits in the brisket and took cloves of garlic and dipped them in my sauce and then in a chipolte seasoning and stuffed them in the slits. My sauce was a combination of KC bar-b-que sauce, beer, salt, pepper, tony sash (sp?) and a couple of splashes of the red vinegar. Just mix the sauce depending on your taste. I then poured the sauce over the briskets and lifted them to get some of the sauce underneath. Also, put the fat side up. I wrapped the tin containers in foil and baked them at 225 degrees for about 7 hours and then took them off and put them on the grill for about an hour. My husband could barely cut it cause it was falling apart.

I usually always cook chicken in the oven at 350. I rarely cook it any other way. It is always very moist. Last night I took some leg quarters I bought that were seasoned and I just put some olive oil in the bottom of the pan and brushed the tops with regular bar-b-que sauce and then wrapped the container in foil and baked them. They were falling off the bone. Usually though I cook breast and I mix some bar-b-que sauce, italian dressing and some seasonings and pour it over the chicken, cover and cook it on 350. It's kind of hard to overcook it in the sauce.

My mom never taught me how to cook. I didn't find I liked doing it until I got older, and now I love to cook. I just usually play around with stuff. Sorry for the novel! :)
