Is there ANY one vegetable you can eat?

There are good ways to make vegetables taste great. If you are only eating things like boiled brussel sprouts, then I don't blame you - not sure which ones you hate, but if you are interested in any good veggie recipes to try, let me know. They are so essential to good health. You could also puree them so they are undetectable and put them in things like spagetti sauce and soups. I know a few tricks ;)

Sorry to be late with this...here 'tis:
ELEGANT RANCH SPINACH
2 pkgs (10 oz each) frozen chopped spinach
1/4 lb fresh mushrooms, sliced
1/4 cup butter or margarine
2 cups prepared Hidden Valley Ranch Original Ranch salad dressing (not bottled)
1/3 cup grated Parmesan cheese
1 can (14 oz) quartered artichoke hearts, drained.

Preheat oven to 350. Cook spinach according to pkg directions, drain thoroughly squeezing out excess liquid. In skillet, saute mushrooms in butter until softened, about 5 minutes. In large bowl whisk together salad dressing and cheese; stir in spinach, mushrooms and artichoke hearts. Pour mixture into lightly buttered 2 quart casserole. Cover and bake until heated through, 20 to 30 minutes.
