It's up to you, but I live in the Northwest and did a transcription job for a gentleman which was someone interviewing him about his life, and I charged $4.00 a page and $15.00 per hour for any editing. This was a senior citizen doing sort of a summary of his past careers, so it may be under what your idea was, but I didn't want to make it too much. The average in our area quite a bit higher from a professional manuscript company.
A good idea would be to just look up transcription rates from secretarial services in your area and see what they charge to type people's book manuscripts and so on, and then go from there.
