Have you tried looking at

www.hotels.com.. On their web page you can search for hotels with certain amenities like pool, fitness club, or kitchenette. It also lists how many stars the hotel has and gives better descriptions. I'd suggest something in Orlando since it's an hour away from Daytona and Disney is a half hour away.

Most of the the International Drive (I-drive) hotels have shuttle buses to and from Universal and Disney daily. I-drive also has many restaurants, Wet-N-Wild and a bunch of other things to do for the family like miniature golf. Most of the places to visit on I-drive are within walking distances from all the hotels or you can use the Lynx bus system which passes by every hour if it's too far to walk. Hope this helps.
