Not so great for dieters, but heck, every now and then a little diet cheating is good.  Toast up some bread, shred the roast over it, top with mashed potatoes (the real ones!), douse in brown gravy - instant comfort food.

Roast Beef and Sauce in Crock Pot

Any kind of roast, but works well with eye roast.  You can pan oil quick fry it to seal in moisture, but I have cooked this without pan searing as well.


Stir together, 1/2 cup soy sauce, 2 tbsp ground garlic, 1/4 cup of oil, 4 tbsp vinegar, and about 1 tsp of ground ginger.


Pour over roast and cook in the crockpot.  Depending on the size, I would do high for a while, and then down to low.  About 8 hours or so.  I've made this both in the crockpot and in the oven, so time varies.

Got a creamed dried beef question. Do you find it best to saute the dried beef in the butter and
then add all the rest or do the cream part first and then add the dried beef at the end.  Seems like both ways are in the recipes and just wondered which gets the best.

I don't blame you for feeling that way...and saying what you said. I actually think it was big of her to apologize to you. She may have had a lot on her mind as she was walking in and didn't even realize until she heard you. A truly rude person wouldn't have cared...you helped her see that she needed to appreciate others. So you actually did a GOOD thing :)

Baby-faced boy Alfie Patten is father at 13

BOY dad Alfie Patten yesterday admitted he does not know how much nappies cost — but said: “I think it’s a lot.”


Baby-faced Alfie, who is 13 but looks more like eight, became a father four days ago when his girlfriend Chantelle gave birth to 7lb 3oz Maisie Roxanne.


He told how he and Chantelle, 15, decided against an abortion after discovering she was pregnant.


The shy lad, whose voice has not yet broken, said: “I thought it would be good to have a baby.


“I didn’t think about how we would afford it. I don’t really get pocket money. My dad sometimes gives me £10.”

Alfie, who is just 4ft tall, added: “When my mum found out, I thought I was going to get in trouble. We wanted to have the baby but were worried how people would react.


“I didn’t know what it would be like to be a dad. I will be good, though, and care for it.”


Alfie's story, broken exclusively by The Sun today has sparked a huge political storm with Tory leader David Cameron saying: "When I saw these pictures this morning, I just thought how worrying that in Britain today children are having children.


"I hope that somehow these children grow up into responsible parents but the truth is parenthood is just not something they should be thinking about right now."

PM Gordon Brown refused to comment directly on the story but said it was important that the Government did all it could to prevent teenage pregnancies.


Alfie’s dad Dennis yesterday told how the lad does not really understand the enormity of his situation — but seemed desperate to be a devoted and responsible father.


He wanted to be the first to hold Maisie after the hospital birth. He tenderly kisses the baby and gives her a bottle.


And Dennis, 45, said: “He could have shrugged his shoulders and sat at home on his Playstation. But he has been at the hospital every day.”


Maisie was conceived after Chantelle and Alfie — just 12 at the time — had a single night of unprotected sex.


They found out about the baby when Chantelle was 12 weeks pregnant.


But they kept it a secret until six weeks later when Chantelle’s mum Penny, 38, became suspicious about her weight gain and confronted her.

After that Alfie’s family told only those closest to them for fear he would be “demonised” at school.



Chantelle gave birth to Maisie on Monday night after a five-hour labour at Eastbourne Hospital, East Sussex.



Last night she told The Sun: “I’m tired after the birth. I was nervous after going into labour but otherwise I was quite excited.”


Chantelle told how she discovered she was expecting after going to her GP with “really bad” stomach pains. She said: “Me and Alfie went. The doctor asked me whether we had sex. I said yes and he said I should do a pregnancy test. He did the test and said I was pregnant. I started crying and didn’t know what to do.



“He said I should tell my mum but I was too scared.



“We didn’t think we would need help from our parents. You don’t really think about that when you find out you are pregnant. You just think your parents will kill you.”



But Penny figured out what was going on after buying Chantelle a T-shirt which revealed her swelling tum.



Chantelle admitted she and Alfie — who are both being supported by their parents — would be accused of being grossly irresponsible. She said: “We know we made a mistake but I wouldn’t change it now. We will be good loving parents.



“I have started a church course and I am going to do work experience helping other young mums.



“I’ll be a great mum and Alfie will be a great dad.”

Chantelle and Maisie were released from hospital yesterday. They are living with Penny, Chantelle’s jobless dad Steve, 43, and her five brothers in a rented council house in Eastbourne. The family live on benefits. Alfie, who lives on an estate across town with mum Nicola, 43, spends most of his time at the Steadmans’ house.



He is allowed to stay overnight and even has a school uniform there so he can go straight to his classes in the morning.



Alfie’s dad, who is separated from Nicola, believes the lad is scared deep down.



He said: “Everyone is telling him things and it’s going round in his head. It hasn’t really dawned on him. He hasn’t got a clue of what the baby means and can’t explain how he feels. All he knows is mum and dad will help.



“When you mention money his eyes look away. And she is reliant on her mum and dad. It’s crazy. They have no idea what lies ahead.”



Dennis, who works for a vehicle recovery firm, described Alfie as “a typical 13-year-old boy”.



He said: “He loves computer games, boxing and Manchester United.” Dennis, who has fathered nine kids, told how he was “gobsmacked” when he discovered Alfie was to be a dad, too.



He said: “When I spoke to him he started crying. He said it was the first time he’d had sex, that he didn’t know what he was doing and of the complications that could come.



“I will talk to him again and it will be the birds and the bees talk. Some may say it’s too late but he needs to understand so there is not another baby.”

Chantelle’s mum said: “I told her it was lovely to have the baby but I wish it was in different circumstances. We have five children already so it’s a big financial responsibility. But we are a family and will pull together and get through.

Last night Michaela Aston, of the anti-abortion Christian charity LIFE, said: “We commend these teenagers for their courage in bringing their child into the world.



“At the same time this is symptomatic of the over-sexualisation of our youngsters and shows the policy of value-free sex education just isn’t working.”


Today Sussex Police and the local council's children services said they have investigated the case and pledged continued support for the young parents.

I have noted a few posts regarding pork skins.  They are actually a actually listed in the Adkin's diet as a snack food.  You can find them at any flea market in the south. 


I grew up in Illinois (St. Louis metro) and many of the same foods we ate there are common here.

Slow Cooker Barbeque Sandwiches
INGREDIENTS
1 (3 pound) boneless chuck roast
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
1 (18 ounce) bottle barbeque sauce ~(I use KC Masterpiece BBQ sauce.)


DIRECTIONS
Place roast into slow cooker. Sprinkle with garlic powder and onion powder, and season with salt and pepper. Pour barbeque sauce over meat. Cook on Low for 6 to 8 hours. Remove meat from slow cooker, shred, and return to slow cooker. Cook for 1 more hour. Serve hot.

This also taste good warmed up the next day.

Tampa here - Cuban sandwiches, deviled crab, Mojo
pork, stuffed potatoes. My husband was born and raised here in the area while I am from Arkansas, and while I have not been to southern Florida (Miami), I have not found another area that has Cubans as good as I can get in Tampa. The only thing we had in my hometown that I've not found elsewhere was a patty melt at the Dairy Queen made with sourdough bread. Sadly they tore it down many years ago and the new store closed a few years back.
Absolutely love tomato and Vidalia onion sandwiches.

Pig Roast
I just went to a pig roast for my brother-in-law's wedding reception. It was a lot of fun. They had gotten married by a Justice of the Peace and has the reception (pig roast) a few months later. It was very causal just like a huge family barbecue. Have a great time.
Where's the beef?
That is what I think that cute little doggie is thinking. My dog Misty likes to look at dog pictures on the internet and she finds him (or her) most attractive and she is mesmerized by that food can. Sometimes I let her watch the dog videos on U-Tube when we are bored. My husband thinks we are crazy, but he thinks it is funny watching Misty watch the other dogs. She even barks back if they bark, they are like virtual doggie playmates!

Can I ask what type of cut makes the best roast? I love pot roast but every time I make mine in the crockpot it comes out tough! I think I've tried just about every cut there is !

here's one from foodnetwork...5 hrs to roast
SLOW-ROASTED PORK SHOULDER
2 heaping tablespoons black peppercorns
25 cloves garlic, (about 2 heads) peeled
10 whole cloves
3/4 cup vegetable oil
1 bone-in pork shoulder, (about 7 pounds)
Kosher salt, as needed
White distilled vinegar, as needed


Preheat the oven to 275 degrees F.
In a food processor, combine the peppercorns, garlic, and cloves and puree. While the motor is running, drizzle in the oil until a paste is formed. Using a rubber spatula, scrap the garlic paste into a small bowl.


Place the pork butt on a work surface and season all over generously with salt. Rub all over with the garlic paste. Place in an oven-safe roasting bag and close with a twist tie. Place in a large roasting pan, and cook until tender, about 5 hours.

What I do is get the Lipton (or store brand) stroganoff mix, and add a bit of Worchestershire sauce and mushrooms and sour cream to the mix as it is heating up  -- easy and it tastes  -- extemely elegant as well   - in fact, I am going to make a batch later :)

I make it in a crock pot all day, but prep time is a breeze... Be forewarned. I don't measure anything. Amounts will depend on preference (more meat/less vegies, thicker vs thinner stew, etc)

Use stew meats or rump roast or whatever meat you want in it. Put the meat in the crock pot early in the morning. Should be done around noon. If large meat, take out and cut up (easire if you let it cool a while). If stew cuts, leaving it is fine. Peel and quarter potatoes (the smaller they are, the faster they'll cook, add to broth, and dump in a bag of baby carrots (onions are good,too, if the kids'll eat 'em). Let them cook a few hours until soft (mid to late afternoon). Add envelope of beef stew seasoning mix and a handful of flour. Stir as well as you can. If you used a meat other than beef (like Boston butt), add beef bullion cubes (and lots of them). Add back the meat. Add a can of mixed vegies. (Harder to stir once the vegies and meat are added back in) Check it every 1/2 hour to hour, adding flour to desired thickness. When you're happy, turn of crock pot, but let it sit so it stays hot. Salt and pepper to taste. Dinner's ready. Add water to leftovers because it will REALLY thicken when cold.

I've tasted better, but I'm always asked to bring this to put lucks, etc, because people seem to love it, and it's really simple to make, taking up very little of my time. If you forget to thaw the meat the night before, it will come out kind of tough, but is still pretty good if the cuts are decent.

i used cubed up beef for stew or a roast.  dip cut up meat in flour, put in crockpot, add carrots, onions, potatoes, celery and one can of diced tomato.  add one or two packs of dried onion soup mix and two or three bay leaves, one or two cans of beef broth and one or two cans of beef gravy.  cook for 6 or 7 hours on low.  add cornstarch to thicken to taste.  you can also make dumplings out of flour, milk, sugar and egg and add to the stew and that is so yummy

I have 3 lbs of ground beef, and...

Personally, I could eat cheeseburgers every night, but the boys are pretty tired of that.  And I'm tired of all the other 'regulars' like meatloaf and tacos, and even shepherd's pie.  What else is quick and somewhat simple that is 'throw-together' from the pantry?



Of course, my 4-year-old is finicky, and I usually give him the options of eating whatever I make or going hungry, but hopefully I'll get some suggestions that might be up his alley, too.

Marinated 2 hours and it was good. We only ate half so will have other half tomorrow and then will see what it's like when we marinate 24 hours. This was kikkoman teriyake sauce (sp?) It was so delicious and will be doing this more. Thanks to all for the time length to marinate.
Prime rib roast

I'm thinking of doing a goose Christmas Eve - will be a first though.  Usually do spiral hams, but I get one for the days while the kids are off instead and do the prime rib for Christmas Day and usually have shrimp cocktail as well.

I have 1 lb of ground beef in the
fridge and expect my husband to call any time now to ask "what's for dinner".  Any ideas? Yesterday I suggested taco salad, chili mac, chili and plain ole hamburgers but all got vetoed. Of course, he had no suggestions to help me out.

Another good way to get your B vitamins is beef, but I got REALLY lumpy when I ate corn finished beef, grass fed is leaner than chicken.

Are you browning/searing it before you do any cooking with it?  That sometimes can make a difference - even if you're going to put it in the crockpot or cook it in the oven.  Try searing it in a pan with a little bit of olive oil and then putting it in the oven or crockpot.  This gives it another layer of flavor with the carmelization on the outside, but it also helps keep the juices in.

Brown ground beef with your favorite seasonings.

Spray bottom of a baking dish with pam, layer with tator tots, spread green beans over that, then ground beef and top with cream of mush soup bake til hot and bubbly.
I'm cooking a roast in the crock sm
that I took an envelope of dry onion soup mix, and two cans (hated to spare 'em) of Coke over the top.  It has been in the crock all day for me to whiff, hmmmm....  Needless to say, I can't wait to see what it tastes like.  I hope hubby and the kids like it!  I do not usually use my crock, but I got this great crock pot recipe cookbook last week from the library, well, I think I'll renew the book....  There are actually recipes for cakes in there, too!  Could you imagine a chocolate cake with pudding in the middle that you've cooked in your crock pot all day?  The book is called Fix It and Forget It!  I love to cook, but when there's lots of typing to do, the quick stuff comes in handy-dandy!  lol  That steak and "stuff" you guys are talking about sounds great!

Son was on a camping trip this weekend and had Lithuanian pork roast.  Anyone out there have a recipe? He loved it!

I believe it said round roast on the sticker-the hunks I buy are around 10.00 apiece with absolutely no fat. My husband loves them. I put it in the oven frozen and cooked it all afternoon on low. Threw two small cans of V8 juice, a whole onion, some garlic and pepper. I thickened the juice with flour a little Gravy Master to darken the juice so it wouldn't be red and put in my potatoes, turned the oven up to 350 and everything was done and piping hot for hubby at 4:30. I had 1 slice, he ate the rest. Now, is that fair? LOL.

EASY beef casserole
Use 2 pkg. of Jiffy cornbread mix and mix according to directions.  If you don't have that in your area, it is a 'sweet' cornbread mix.  Brown 1-1/2 pounds of g. beef and mix in bowl with some mild salsa or 14 oz. can tomatoes, chopped, and a can of pinto beans.  Pour that in your casserole dish and then cover with the cornbread mix.  My 3 year old twins love it.  If you just use the tomatoes you could add some chopped onion to the beef when you brown it.  Just bake it for about 20 minutes or until the cornbread turns golden brown.  this is great with a salad or green beans
I have an eye roast recipe that's easy

Eye Round Roast (average size)


Sauce:


1 tbl crushed garlic (or a few cloves if you use fresh)


1/4 c veg oil


1/4 c of soy sauce


2 tbl of vinegar


1/4 c of honey (i've also used brown sugar, but that burns easy)


1 tsp of ginger


Mix the sauce and pour it over the roast.  I've also seared the roast before adding the sauce and then cook in oven around 350 or you can do this in a slow cooker.


The sauce is tasty and I think the vinegar tenderizes the meat.  I'll slice it down when it's down and add the slices back to the sauce.



What kind of cut? Saying "pork roast" is like saying sm
"roast beef". How you cook a pork roast depends on whether it is a butt, a shoulder, a pork loin, a sirloin. All of them are to be cooked in a different manner.

I do mine with tomatoes, basil and a clove of frash garlic and just a tad of oliver oil. I wrap that in foil and put it on the grill. I make this with red potatoes (slice partway open and put some butter inside, wrap in foil and grill also). I usually steam some green beans to go along with it, but this is a throw it on and forget about is for 45 minutes. Not great for those thighs but tastes heavenly!
How long to cook corned beef
Does anyone know how long to cook a corned beef briskit (don't know how to spell that).  I'm thinking its a few hours but not sure.

I am lazy and not a good cook, but I buy those roast bags sm
in with the seasoning packets. It comes with seasoning and the bag for about $2 usually. I buy whatever cut is on sale, put it in the bag with the seasoning, straight to the hot oven and add veggies in a few hours. Always, always tender and falling apart no matter what cut. I have tried the crockpot too, but mine is never good and tender that way.
use frozen carrots in soups/stews/roast
I always use frozen carrots and celery and onions in my soups, stews, roasts, gravy, etc. You can either thaw them in the fridge (probably the upper part of yours) or in the microwave before throwing into the pot...otherwise start them at the beginnig of the recipe so they have a chance to get a head start over everything else and thaw that way. freezing veggies is a great way to 'use' them before they go bad. we don't eat a whole bundle of carrots or celery before the go bad so when i know they are getting close i chop them all up and freeze them. same with bananas for banana bread and the fixings for salsa. :)
