3 boxes Jiffy cornbread mix
4-6 stalks celery finely chopped
medium onion finely chopped
1/2 stick butter
sage 1 tbsp*
salt & pepper
About 1 cup chicken broth

Cook cornbread according to directions. Let cool and crumble in bowl.

Saute celery and onion in butter until tender.

Fold sage, salt, and pepper into cornbread. Mix in celery and onion and then broth.

Add more water or use less depending on moistness desired.

Be careful with salt because some chicken broths are salty.

*measurement for sage. I'd start with about 1 to 2 tbsps and add to taste. I don't measure, I just shake and taste...

This is a BIG favorite to anyone I serve it to.

You can add anything you want (boiled eggs, etc.)

Main ingredient - canned sweet potatoes (you really can't tell, I made it several times, and my son who hates sweet potatoes, couldn't tell what was in it) other ingredients - bread, celery, onions, egg, a little milk.

WARNING:  I do everything by eye....a pinch here, a smidgeon there...I just throw it all in a bowl and guesstimate.


Ya make 'em kinda like pancakes in a cast iron skillet on the stove and it doesn't heat the house up as much as baking. 


Boil at least a cup of water in the microwave


Put about 1 to 2 cups of self-rising cornmeal in a bowl.  Add 1 beaten egg and mix thoroughly.  Then you add the boiling water in bits, slowly mixing it until the right consistency....not thin like pancakes.... kinda like what you would make for regular cornbread almost.  


Heat skillet with about 1/8 to 1/4 inch oil heated med to med/hi.... then use a good sized serving spoon to dollop the mixture into the pan.  Watch carefully and try not to burn      


DO NOT, under any circumstances use jiffy mix.   


After 25 years I've finally gotten it nearly right (darn Yankee that I am).   Happy vows tomorrow!

I've only had cornbread twice....

The first time when I was a kid and my mom tried making (bland New England palate here) it.  It was so dry and yucky I swore I'd never eat any ever again.


About 10 years ago a co-worker made cornbread to go with lasagne (she's 1/2 black 1/2 italian and a 100% spitfire!) and OH MY GOSH it was soooo good!  She had like this layer of sugar on top that was kinda melted and it was so moist...I could've eaten that whole pan myself.  I asked her for the recipie but she said something like, "Ancient family secret" or some such thing to bum me out.  Cornbread with lasagne.  Never had it since and probably never will.  :(  I wicked miss her but yeah, she made one heck of a cornbread and that sweet style certainly suited my tastebuds!

(i lived in the south 20 yr but Cal-bred and raised) included creamed corn, cheese, and i think salsa (its been awhile since i made it). But my hubby likes it not made sweet but in a bowl with milk and sugar.
Stuffing recipe

Looking for a good meatless stuffing recipe.  Could possibly use sausage in it, but would prefer a meatless one.  Thanks for any suggestions.

I have to work TK, so I'm doing as much ahead as possible.  I assembled the stuffing last night (cornbread stuffing, no meat, just the usual ingredients).  Will it 'keep' better if I bake it now and rewarm on TK or is it safe to wait until Thursday?  Thanks.
Make your stuffing - put it in a pan - add 1 or 2 ....
cans of low-sodium chicken broth and bake. If you like wet stuffing, cover it; if you prefer it dry, leave the cover off.

Use Italian dressing to rub on boneless chicken for flavor, prepare corn bread stuffing or instant from mix, either put under each breast or serve separately, peel and wash small potatoes, coat w/the same Italian dressing or non-saturated fat oil, bake at 375 for about 45 min. depending on thickness of chicken, until chicken is well cooked, sometimes you can just put this in a large baking dish and you don't have to do anything but check the chicken to be sure it's "done" and I find it pretty simple and serve a vegetable on the side if available.

True cornbread- you and I are alike
on that. Have had all my life and never put cranberries in it. My aunt was just saying the other day she could taste her mother's dressing, rest her sweet soul. It was so good, put sausage in hers along with the cornbread, of course, no white bread filler.
I use Jiffy cornbread and it is SO good (sm)
and the other stuff, celery, onions, sage, but never did the cranberries. I might try that next time. I do make fresh cranberry sauce though. It's SO easy and it is the best.

Back to the cornbread dressing, I've always gotten raves over it. One of my daughter's frends said he didn't like stuffing, wouldn't even eat his mom's, but took a taste of the CB stuffing and had seconds! Ya'll ought to try it ;-)

Savory mushroom stuffing. . .
8 slices white bread, cut into 1/2-inch pieces
1 1/2 pounds mixed mushrooms, such as cremini and shiitake
2 to 3 tablespoons unsalted butter, plus more for the pan
2 tablespoons extra-virgin olive oil
6 shallots, sliced
4 cloves chopped garlic
1 tablespoon minced fresh rosemary
1/4 cup Cognac, or other brandy
2 cups chicken broth, homemade or low-sodium canned
2 teaspoons kosher salt
1 cup heavy cream
3 large eggs, beaten
Freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley

Preheat the oven to 350 degrees F.
Spread the bread cubes out on a baking sheet and toast in the oven until golden and crisp, about 5 minutes. Set aside to cool.

Trim the dry part from the bottom of the cremini stem and quarter. Stem and quarter the shiitakes. Melt 2 tablespoons of the butter with the olive oil in a large skillet over medium heat. Add the mushrooms, shallots, garlic, and rosemary and cook, stirring occasionally, until the vegetables soften and brown, about 25 minutes. Add an additional tablespoon of butter, if needed, to prevent sticking. Carefully add the Cognac (if working over gas, pull the skillet from the heat), and simmer until the liquid is slightly syrupy. Stir in the chicken broth and salt and bring to a simmer.

Whisk the cream, eggs, and pepper, to taste, in a large bowl. Add the bread, mushroom mixture, and parsley and toss until the bread is moistened. Transfer the dressing to a buttered 1 1/2-quart baking dish. Bake, uncovered, until the dressing sets and the top browns, about 1 hour. Let dressing sit for 15 minutes before serving.

we usually also have homemade rolls, another vegetable and cranberry sauce, sometimes mashed potatoes with the gravy too...

My new favorite is Vidalia onion cornbread sm

Vidalia Onion Cornbread (from Paula Deen)


1 box Jiffy corn muffin mix


1/2 stick butter


1 large Vidalia or other sweet onion, chopped


1 egg, beaten


1/3 cup whole milk


1 cup sour cream


1 cup grated Cheddar cheese, divided


1/4 tsp salt


1/4 tsp dill weed (which I leave out)


Preheat the oven to 450 degrees F. Spray an 8-inch square baking pan with vegetable oil cooking spray. In a medium saucepan, melt the butter and saute the onion until tender, but not browned, for about 3 minutes. Remove the pan from the heat and add the muffin mix, egg, milk, sour cream, 1/2 cup of the cheese, the salt, and dill weed. Stir to combine. Pour into the prepared pan and top with the remaining 1/2 cup cheese. Bake for 30 minutes, until set and a toothpick inserted into the center of the cornbread comes out clean. Allow to cool slightly before cutting into squares.


I double the recipe and bake it in a 9x13 or even 11x15 pan and it comes out great. And to keep the cheese from getting too dark, I add it the last 10 minutes instead of at the beginning. So yummy!


Second favorite is corn casserole, very similar to the onion cornbread.


Corn Casserole


1 pkg Jiffy corn muffin mix


8 oz sour cream


1 cup shredded Cheddar cheese


1 egg


1 can whole kernel corn (do not drain)


1 can cream-style corn


1 stick of butter


Melt the butter in an 8x8 baking dish in a 400-degree oven. Meanwhile, mix the corn muffin mix, juice from whole kernel corn, egg, and sour cream until well mixed. Add remaining ingredients and pour into dish with butter. Stir slightly to mix in the butter. Bake 30-45 minutes or until set in the middle.


Again, I have doubled this recipe and baked in a 9x13 pan; however, do not double the butter or it is too greasy.

People love my bread stuffing sm
I use Pepperidge Farm seasoned bread stuffing, don't know what other brands are out there, this is put out by a bread company. Then instead of water, use orange juice. I once tried chicken broth but too greasy. I add freshly chopped onions, celery and sometimes raisins and small amt. of chopped cranberries. I never stuff the turkey but bake it separately in a casserole. If it looks too dry, I may add a teaspoon or more of the final turkey drippings just over the top. This is one time I use butter. I have tried rubbing the bird with mayonnaise and that works well. Like to experiment but always the turkey comes out just fine at 20 minutes per lb. and use a thermometer. They always ask for more stuffing.

Rice would probably work. I use a recipe with rice for stuffing peppers and cabbage.
Also, whenever I make meat loaf, I use fresh bread rather than crumbs. I think it's moister that way. But, I also puree a veggies, like onion, carrots, mushrooms, and mix that in, too. It's very tasty.
I just got this new Dog yesterday
I just got this new Dog yesterday. She is so cute and good but is not trained yet. How do I get the dog to go to the door to let me know she needs to go potty? She is a sweet and very mild girl, gets along well with the cats and hardly barks. We only had two minor accidents yesterday. I could really use some tips. Thanks in advance.

and I were discussing dryer troubles.  Her quit working, she had a repair man take a look at it.  He vaccumed out all the lint and it cost her $150.00.  Then 3 weeks later, it quit working again.  Next time I will tell her to call you.
Went to the ER yesterday and they
said it was probably just a viral infection.  She is just in the bed sleeping on and off.  She don't want to play or do anything else.  She don't have an appetite.  She has been drinking pretty good though.  Popsicles is a good idea also.  I'll try that also.  Again, thanks so much for the advice.  It is definitely appreciated.

I live probably what is considered North Georgia but 19 miles south of Atlanta. The living is good where I am and the weather, about 60 yesterday and supposedly the same today. Our winters here usually mild, this year we have gotten down to the teens once or twice but nothing you probably see all the time. I wish we did not have tornados warnings here, scared of those. The weather in the summer can be HOT and humid normally. I would much rather have this than what I see with all that snow and ice. I only remember 2 times since the 80s of what you might term blizzard or icy conditions and even those gone in a few days.

performances, I would rather say that Danny will be voted off. Chris was really good last night and Adam will be the winner, he is just in another league.

I was also out of work, no big problem with me. I am talking about being looked at as professional, not cleaning, cooking, taking care of babies, on and on when you do have work. Posts are written about how to fit other things in while they work?? I think most of us from time to time run out of work, myself included.

she loves it, of course! They close the door and you don't get to watch, but you can hear them singing. I guess they'll start learning steps for their recital in June now. Dh is having a fit over what the costume "might cost." I just read the letter when I got home about paying the rest of the costume (gave deposit of $55). The cost for the class is $54 every six weeks. Does that seem good? Does anyone know what the costume could cost? I'll probably just call the teacher and ask, but why not state it in the letter? Is it something they don't even know yet? I'm very new to this ballet stuff so not sure.
I saw a little doggie yesterday in a car
as I pulled up to get out and looked and would have called the police, alone in the vehicle at a flea market but what saved the owner was they had the window down. The weather here was in the high 50s and climbing but I would not hesitate if the windows had been up.
It has been on MSNBC since yesterday.
I'm on the West coast and just heard about it last night.

It was clearly an accident and now she has a criminal record over it.
Yesterday I was at the mall and a

guy was walking along talking to a young girl. He rounded the corner and I was coming toward them. He stopped his conversation with her and said loudly to me,


You're pretty . . then went back to his conversation with her!  LOL! She did not seem upset at all.  Her brother? a friend? 

Question. . jerk or just a darn nice guy?  LOL 


She was also on Oprah yesterday
singing with Kelly Clarkson and Justin Limberlake, promoting her Duets with Rebba, I think that is what it is called, album. Think I will buy it. She is great. Also loved the sitcom, especially her with her ex and Barbara Jean. Very funny.

It honestly has helped. When you said don't think of the whole amount to start with, and losing a little is more than gaining has really helped. All the comments I received were so nice and so many people can identify with this problem.  So far I am doing good. Wish me luck and thanks again!
My cat with lymphoma from yesterday.

I just wanted to thank all of you again for your kinds words to help me get through a very difficult time yesterday.  My little girl is gone.  She went very peacefully and fast.  She is now resting in my garden with a couple of garden statues to keep her company.  Her name was Sixer, as she had 6 toes on her left foot.  We got her from a shelter 10 years ago and we knew she was the one.  I wanted to get a female cat so that I would not be the only girl in the house.  She was the little girl I never had. 


I had a very difficult morning today. It still feels so strange to not have her walking around the house.  Very lonely without her, especially working at home. The sun is shining again today, and I know she is in a better place.  My tears will subside and my heart won't be so empty some day, but right now not so much. 


Again, my sincere thanks for being so kind.
