Just read the post below about Easter dinner. I have a question I am almost embarrassed to ask - does anyone know an easy way to get the rind off the ham?
Need help with Easter dinner.
I am doing Easter at my house for the first time, as I am the only one with kids in my family. I am looking for something to do that is sort of traditional, but fun. My family does not like lamb, but all else if fair game. I would love any ideas to help me plan for my first real holiday feast!!! Thanks and hope you all have a great holiday!

potato recipe for Easter dinner
1 package of frozen shredded potatoes. 1 pint of whipping cream salt to taste
dump potatoes in a casserole dish, salt to taste, and pour whipping cream over top. bake 350 for about 60 minutes.--- susan
easter dinner - pineapple casserole
2 eggs
1/2 c sugar
3 T. flour
1 can Dole crushed pineapple with juice
1 stick butter, melted
6 slices bread cut into small cubes
Mix eggs, sugar and flour together, add can of pineapple with juice. Pour into (spray PAM) casserole dish. Mix together bread cubes and melted butter and put overtop. Bake 350 for 60 minutes. If bread is becoming too brown, put foil over it toward the end of the baking time.
Enjoy. I've made this every Easter and it's a hit. ---susan

for Thanksgiving dinner. No one cares much for turkey, so we are having ham, sweet potatoes, mac & cheese, green beans, corn, homemade rolls, asparagus, bruschetta, pumpkin pie, cheesecake, and Rice Krispy treats.
It is not terribly traditional, but everyone always has something they will eat,and the kids have fun making their choices.
One year the kids picked lasagna,grilled cheese sandwiches, shrimp cocktail, Pizza Rolls, and Pop Tarts. It was interesting and fun. It also alleviates some of the stress of trying to create the "perfect" Thanksgiving dinner.
Any suggestion for after-prom b'fast menu?
My youngest son is a h.s. senior. He has been dating a girl in his class for a year. My older son has also dating a girl in this senior class for 2 years, so I've gotten to know this group of kids and their friends pretty well since they tend to hang at our house.
The kids are talking about coming back to our house with their friends after the prom. We have a big screen t.v./theater setup. They want to watch a movie, and I promised to make them breakfast in the middle of the night. I'm very happy to do this, since around here, the kids like to drive to the NJ shore after the prom, and that is not something I encourage.
So, I'm just sort of thinking about this breakfast, which is months away. I'm looking for interesting ideas to make their after prom gathering special, even if it is a simple back-at-the-house thing. I can do the usual things, but I'm looking for something that might really make the kids smile.

At my house, my kitchen is not a restaurant. You eat what I make or you fend for yourself. Now of course I know my family's likes and dislikes and I do take requests, but if you're going to turn you nose up at everything I suggest without offering anything up, you get what you get!

Easter
Why do Easter baskets have to be candy? I got my niece and nephew both baskets, with a chocolate bunny and then little things such as a 10 piece puzzle, jacks, bubbles,a paddle ball, a movie little things that they could play with today and more than likely be gone tomorrow, they seem to enjoy those things more than candy anyway. I have a birthday near a holiday and it is not a great feeling to a child to have to "skip" a holiday because her birthday is near, just my opinion.
Easter Plans
Going to my parents an hour away as usual. We're having pork roast and all the trimmings. Unfortunately, a sad time too. My aunt passed away this past week and my cousins are bringing her back for burial the day after Easter.
Easter is a really special time too. sm
daughters are a special blessing.
She wasn't going to do Easter for the girls, so they did. sm
It's ok. Every kid, even at that age, regarding you IMHO, deserves a great Easter basket. Get over it and stay out of it.

yes, I know it was from my parents, but it was still fun every year. My mom knew Easter was my favorite holiday and didn't begrudge me a basket because I was too old. I'd ask her next time if she would still like to get a basket or not, I think her mom would be surprised by the answer. As for the teeth, as long as she brushes properly cavities should not be an issue. If she has not yet had enamal painted on her back teeth your daughter should talk to the dentist. They now paint the back teeth with an enamal, cure it with UV light and it seals the back teeth from getting cavities. Costs me aboutr $34 a tooth but worth every penny. I've paid about $225 between my 2 to have it done. Think its a wonderful idea. My 1 has had 3 cavities (she's 8) but 2 were on baby teeth; the other one has none (7). --As for the competition that is hard to quash, my DH does it to me and we are married. He wants the kids to "like" him. It is a pain in the butt and I deal with it the best I can but I don't overly worry about it. I have good kids who listen to me and that is what counts.

Yikes. It seems so soon. And I do not like it when Easter is in March.
Too chilly for the Easter dresses and no spring flowers out yet. Not a springy Easter Bunny feeling Here in Northern New Jersey just had 4 more inches added Friday from our previous 8, which had melted away and now the white stuff back on the ground. Probably will snow on Easter, although going to be in the mid 50s today. One can only hope.

I don't remember the first dinner I prepared for my then boyfriend, now husband...but I do remember the first dinner he ate at my house. It was butter beans, meatloaf, and fried potatos and cornbread! I was mortified when my mom asked him to stay then proceeded to give him the menu for the night. Well, to my disbelief, he absolutely loved butter beans...this was his favorite meal. I about died, being a 16 YO girl, but he loved it!

I'm making up a big pot of BBQ. You can usually get a pork loin on sale anywhere. I throw it in the slow cooker, cover it with water, and cook it for 24 hours. After that, I dump the water, pick out the fat, and shred the pork. I like to use sweet baby ray's original BBQ sauce.
This is inexpensive if you buy the pork loin on sale. I'm making some for a party tomorrow.
Usually 3-4 pounds of pork feeds 3 of us for about 3 days, unless one of us is really hungry. lol

I will either have leftover vegetarian chili with cornbread, or leftover penne with cheese. I always cook enough to have leftovers because I hate cooking, especially everyday. The kids (13 and 20 year old girls) will probably have fast food. My 13 year old is a vegetarian like me so she will probably get cheese pizza or a veggie patty sandwich at Subway. My oldest with probably have McDonald's.

Sunday dinner
Well, yeah....The boys (23 and 25) come over on Sunday afternoon before they go work to check up on us old folks and eat up our food. They'll come in and help with prep first. We get a lotta laughs in the kitchen.
They've been cooking since about the age of 5 and 7...I didn't have girls and they wanted to be part of the process... sous chefs (cut this, peel that, okay this is how you sautee) ....worked for me and they'll never starve wating for someone else to cook. Cat
Should I serve something before dinner?
Ok group, it is now getting to be that time again when I have to start thinking of the big dinner spread I am planning to have. I will have ham and turkey with all the trimmings but my question is this - should I have appetizers when the guests arrive, some kind of drinks, wine/champagne or just what? I can put on a good dinner when it comes to the food and all but just wondering what to do prior to the dinner. Thanks so much!
Looking for dinner ideas
We're having dinner guests on October 14, our friends, their 18-year-old son and his friend (who I've been told has a very hearty appetite). It may be too cold to cook out on the grill by then. I'm definitely not a gourmet cook, and I cringe at the thought of having dinner guests because I always wonder what would be good to make. Lasagna is one of my favorites, but my 13-year-old daughter doesn't like it. Would anyone care to share any ideas and/or recipes with me? I know one of guests does not like onions.

I think I would wait until the dinner
before getting so upset. I understand there is obvious issues with your SIL and if it does pan out the way you have it in your mind right now, then you can be upset but I think it's a little premature to get that upset about it.
By the way, I'd call your daughter anyway!

We don't have a holiday dinner without
mac and cheese. This is mostly due to my niece. The only thing she will eat at these major meals is kraft mac and cheese, mashed potatoes, and rolls. She is 14 years old, but SIL and BIL have no problem with it. I am lucky, my kids don't like everything, but are good eaters and most of the time are willing to try new things.

Just kidding, but that menu sounds absolutely FABULOUS. We have an Italian deli right down the street and treat ourselves once a week to lunch. In my opinion, very little can top an authentic Italian deli.
