Got a creamed dried beef question. Do you find it best to saute the dried beef in the butter and
then add all the rest or do the cream part first and then add the dried beef at the end.  Seems like both ways are in the recipes and just wondered which gets the best.
Dried Beans

I always used to use those for bean soup for our family reunion. About 10 years ago, I made it and the beans were still crunchy!  First time I had that problem. I had to throw it all out (20 quarts) and start all over again, yet only had 1 day until the reunion, ran out and bought canned beans. Worked. Now I use canned beans instead.


Never knew what happened, but I'd rather use dried beans because of the cost and shelf life.


Had hysterectomy years ago and not dried up per se but
my face was doing exactly as yours, the flaking of the eyelids. My surgery was in 1984 so it was not that. My dermatologist told me to never ever again put regular soap or those good smelling products on my face and told me to use Cetaphil soap (get at your drug store, Wal-Mart, etc) and I was not believing her but it works. The dry flaky eyelids went away as well as the other dry parts on my face. I tried a lot of the other things the people mentioned on MTs to me but finally found the answer. Try it, I do not think you will be sorry. Hey, by the way, my eyebrows even had dandruff (none on head) in them and that was terrible. Good luck!

I tried to leave by telling the guy the little one needed tending too...and it wasn't like the odor said I was lying about it! He just kept talking. The allotted time was over and we reminded him of that several times. As he did not want "his chance" to get away and wouldn't stop talking, I was left with no alternative.

You say classless and I bet you were one of the ones miffed for giving up 3 hours of your time when the deal said you only had to stay for 1-1/2 hours. We fulfilled our obligation. The rest...well, was... in the diaper. At least I didn't ask him to dispose of it!

There is a joke among used car dealers that becoming a TS salesman is what happens when a used car salesman gets burned out!

It's a business arrangement. We fulfilled our obligation and the offers always say you are under no obligation to buy...just fulfill their criteria. When the salesman overstepped his bounds and wouldn't take no for an anwer, he made the situation more uncomfortable than it had to be. Ms. Manners would probably chastise the TS salesman for not taking no for an answer, me for changing the child in front of him (there were no bathrooms where he gave the tour), and you for the holier-than-thou attitude. Classy indeed!

My husband is a hunter.  Venison is a staple in most diets in the south. 


I have noted a few posts regarding pork skins.  They are actually a actually listed in the Adkin's diet as a snack food.  You can find them at any flea market in the south. 


I grew up in Illinois (St. Louis metro) and many of the same foods we ate there are common here. 


Crab in Tomato Sauce with Pasta






CRAB IN TOMATO SAUCE WITH PASTA  


1 lb. blue crab meat, flaked
2 tbsp. butter
1 tbsp. olive oil
1 med. onion, coarsely chopped
2 cloves garlic, minced
2 tbsp. flour
1 (16 oz.) can whole tomatoes, drained and quartered
1 c. chicken broth
1/2 tsp. salt
1/4 tsp. pepper
2/3 c. Parmesan cheese
Spaghetti or linguine, cooked and hot


In a large skillet, combine butter and olive oil and saute onion and garlic over medium heat for 2 to 3 minutes, add the flour and cook and stir until flour is well blended. Stir in broth, tomatoes, salt and pepper. Bring to a boil, reduce heat, cover and simmer 10 minutes. Add crab meat and cook for 5 minutes.  Toss hot pasta with 1/3 Parmesan cheese, then top pasta with crab-tomato sauce. Pass remaining cheese.

Makes 4 to 6 servings.

So I see this commercial and I LOVE THE IDEA....the price...not so bad...19.95 for 2.  but then the lower the boom:  7.95 shipping for EACH?!?! You've got to be kidding.  I just wanted to know if anybody has one and if it's worth it.

I take my dog into the mall all the time and it's no big deal. I'm not being rude or discourteous to anyone and I mind my own business. It really sounds like you need to do the same. Live and let live. 
Easy! I grew up on quick tomato sauces.
It's very simple, and I do it without a recipe. I do my "light" sauce without meat in a very large pan, but you can do it in a medium to large pot.

I heat the pan over medium heat, I put several "glugs" of olive oil, probably a little less than a quarter cup. Toss in a clove of finely diced garlic (or more if you like), and about a half of a large onion finely diced. Saute for just a bit on medium heat to get everything softened and translucent, but not browned. Toss in tomatoes, either 4-6 cups of diced peeled and seeded fresh tomatoes, or one large can of crushed tomatoes. Add two or three leaves of chopped fresh basil, or about a tablespoon of dried basil. Let it all simmer for about 20 to 30 minutes (longer if using fresh tomatoes), and that's the very basic tomato sauce. I add salt to taste only at the end after it's reduced a bit. You can cook it longer if you like it thicker.

I vary it based on what how I'm using it. I sometimes add mushrooms or peppers, or a little hot pepper flakes to spice it up. If I'm using it with meat, I also add a little wine. Occasionally, the tomatoes might be just a little on the acid side, and then I'll throw in a pinch or two of sugar to cut that.

I don't use much sauce on my pasta or on meat, just a little bit to coat it and a bit more to top it to make it pretty. My grandmother and all of our Italian neighbors used these sauces pretty sparingly by American standards. I think in this country, we tend to really slather on the spaghetti sauce, so this recipe may not make as much as you want. If you want more, you can easily double or triple it.
You can grow tomato plants upside down from hanging pots, too.

when I wasn't paying attention.  He even put in parsnips - my favorite part.

After oven drying...
You can also grind them up into a powder to add to soups and things that you would normally add tomato paste to. It works out great!
I had a mouse get in my double oven many
years ago and get electrocuted on the wiring. Needless to say the kitchen smelled like something dead for DAYS. I tore the room apart and never found it. When we took the front electrical panel off 3 months later to replace a report, there it was! Looked like it was crucifed. All bones and they all fell out all over the stove. Yuk.
Dutch Oven Cooking
Hi - Glad to see you here again. I still missed your piggy "baby" - likes to hide, I guess. Cold here too. It is really easy to cook in the fireplace or on an iron stand in your back yard or a hole in the ground. I will email you some recipes and look at all the fun you will have! Nothing tastes as good as dutch oven food! Get ready for a new dress size! Your husband will be your slave if you feed him this food, I swear. Have to know, how much is wood a cord out there where you are? It is 492.00 here, and that is horrendous. We used to cut our own and it was basically free with sweat labor.
How to keep baked potatoes hot out of the oven?
Our church is having a potluck Februrary 21 where the men prepare the main dishes . DH had decided to bring baked potatoes with all the toppings . He will probably bake about 40 potatoes . How can they be kept hot ? I thought of lining a roasting pan with towels & covering it with its lid . Any suggestions?
I have both - gas cooktop & electric oven sm
My oven is a wall oven, and I am so spoiled by it that it could be a make or break factor in whatever house we buy after this one. I love the fact that the stovetop is gas with the ability to cool down a pan immediately when cooking without having to move it. I had never had a gas stovetop before this and it did take a little getting used to, but I love it now and would never go back to electric without a fight.

Lately I've been forgetting to turn OFF the oven!

Sunday we had dinner at 5ish, when it was time for bed at 10 and I shut all the lights off, I noticed some extra lighting on the stove...it was telling me the temperature I had set it to and that it was still on!...and it's a gas oven too!  I think I've done this about 5 times this year now.  Wicked, wicked not so s


you can wrap them in alu foil and put them into the oven (preheated).....
But then they do not come out crispy, rather soggy, but good, nevertheless.

Question. Which oven rack do you normally use when baking meats or what have you. Never sure if
bottom rack is best or middle rack which seems rather far away from the heat.
Can someone tell me what temperature you bake cod fillets at in the oven and for how long. It is
about 1-1/2 pounds.  I have a hard time with fish knowing when it is done.  Do you put it on a baking sheet.  I want just plain old fish just butter and lemon on it.

I have the boneless chicken, the skewers, the teriyaki sauce, how can I do this in the oven without ruining everything or starting a fire? Kinda stuck in the snow here and making the best of preparing a menu. Also, if anyone still has the hashbrown casserole, I have all the ingredients (I think) but lost the recipe amts., etc.

from time to time would baste with sauce.  I had the oven low and cooked them slowly and they were wonderful.  My family just loved them when I invited them over for dinner.  You made me hungry for them.  It has been a long time since I made them.  Mine were not fancy, just good!!!   Good luck!


Food safety question - left chicken in oven overnight (sm)
I baked two pans of chicken last night and one of them I forgot and left in the oven all night.  It has not been touched or opened since being cooked.  If I reheat it today do you think it is ok to eat or would you be afraid of food poisoning???
What is the best way to make a plain old center cut pork roast in the oven and at what temperature.
I dont want to add things to it just cook it.  Not sure to cover or what to do.

I have no concept of "surface is HOT." It stunk up the place and ruined a new set of oven gloves, but it was okay. I am very careful of it now, because a HOT SURFACE light means it is HOT.

We are going to a family reunion this weekend and I'm looking for some new ideas for something to take.  Not anything too complicated since I work full time at home with 4 kids plus mother-in-law and 2 extra family members will be here tonight from Arizona and staying with us.  Can be anything - dessert, side, main etc.  Just having a hard time coming up with anything really yummy to feed a big group.  Have lots of chicken in the freezer so maybe something down that line. Okay - i'm looking for really yummy dinner recipes that are very cost-effective.  During the week it's mainly me and my 7-year-old and I'm sick of spaghettios, hot dogs, and chicken nuggets.  Hubby is home on weekends but I get tired of making the same things every weekend, not to mention the cost of groceries sometimes makes it difficult to have the "standard" meat, potatoes, veggie, bread dinner!  TIA
Looking for recipes for...

microwave candies or relatively foolproof stove-top or oven methods, preferrably ones that have been tested.   I typically bake and decorate iced cake-mix cookies and make up gift boxes for neighbors, friends, the mailman, etc.,  but candies would be a nice addition...fudge, divinity, pralines, nut brittles, killer brownies or anything else you may have in your repertoire would be appreciated.

Also for an added idea take a brick of softened cream cheese and pour some mexican Ro-tel on and serve with chips. Also add some cooked ground sausage to the Velveeta with Ro-tel.

Rotal adn Velveeta are staples in my home and I live in WA and I can buy it at any major grocery store.

Leftover ham recipes?
I had a big spiral ham Christmas Eve buffet but too much other food and a large portion, over half, not touched. I never leave my food out long, asked everyone if they were sure they didn't want more, put it in the fridge with intent to send some home with them but they had so many cookies, etc., to take that they didn't take any. I am going to a party tomorrow and wondered if along with what I am bringing, should I grind some ham up and make a ham salad to be put on nice crackers or rolls? I don't want it to look like I'm pushing leftover ham from Christmas but it will only be the 6th day and it's only the two of us here, so I hate to waste it. I'm not sure if I should just skip the idea or use it up. I don't want to look like an old cheapo.

I bought two Foster Farms Chickens, on sale, not over $5.00, well I got three meals out of those two chickens, cut each up for frying the best parts, made chicken soup with the less desirable parts, back, etc. adding my last frozen pack of tomatoes from DH garden last summer, and other veggies, bow tie pasta, sprinkled with fresh chopped parsley and parmesan, Yummie.  The other two packages, one will be oven fried chicken, recipe on breadcrumb container and the other from my Campbell's Soup Cookbook, something or other.  Not bad for the price!
