6 sweet potatoes
1 (20 ounce) can crushed pineapple
1 cup packed brown sugar
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cloves

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter one 9x13 inch baking dish.
Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool. Peel and quarter.
In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring to boil and reduce heat.
Arrange potatoes in a single layer in baking dish. Pour sauce over potatoes and bake for 45 minutes.

I made baked sweet potatoes for dinner last night
You cook them just like a baked potato. My 10 y/o daughter and I just like butter on ours. I love sweet potatoes though! I also have a really good recipe with apples and sweet potatoes in a casserole (see below). I brought it for Thanksgiving dinner last year and it was a hit! It's more tart than sweet and really delicious!

Apple-Sweet Potato Bake

3 pounds sweet potatoes
4 medium tart apples, peeled
1/4 cup lemon juice
1/2 cup chopped pecans
1/2 cup butter, cubed
1/2 cup packed brown sugar
1/2 cup honey
2 tablespoons orange juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger

1. Scrub sweet potatoes with a veggie brush under cold water. Pierce skin in several places; place on a baking sheet. Bake at 400 degrees for 35-45 minutes or until almost tender (I bake them a little longer cuz I like them pretty mushy). Cool slightly; peel potatoes and cut into 1/4 inch slices.

2. Cut the apples into 1/4 inch slices; toss with lemon juice. In a greased 11-in. x 7-in. x 2-in. baking dish, alternately arrang sweet potato and apple slices. Sprinkle with pecans.

3. In a small saucepan, combine the butter, brown sugar, honey, orange juice, cinnamon and ginger. Bring to a boil, stirring constantly. Remove from heat; pour over potatoes and apples. Bake, uncovered, at 400 degrees for 25-30 minutes or until tender.


Here's another recipe I make sometimes. It's called "Heavenly Sweet Potatoes" by Campbell's Soup.

Vegetable cooking spray
1 can (40 oz) cut sweet potato, drained
1/4 tsp ground cinnamon
1/8 ground ginger
3/4 cup Swanson Chicken Broth
2 cups miniature marshmallows

Spray a 1-1/2 quart casserole with cooking spray. Set the dish aside.
Place the potatoes, cinnamon and ginger in a 3-quart bowl. Beat with an electric mixer on medium speed until the potatoes are fluffy and almost smooth. Add the broth and beat until the ingredients are mixed. Spoon the potato mixture into the prepared dish. Top with the marshmallows.

Bake at 350 degrees for 20 minutes or until hot and marshmallows are golden brown.
Sweet Potatoes

I have never been able to stomach sweet potatoes because every recipe I've sampled has been way too sweet. Canned sweet potatoes smothered in maple syrup or brown sugar and mini marshmallows. YUK!


Does anyone have a tried and true recipe that is not so horribly sweet? Maybe I don't like them because I've never had them prepared properly?

Fresh, not canned. Brown sugar and butter, sometimes pecans, but NO marshmellows.

Also pumpkin pie with whipped cream and pecan pie.
Have you tried baked sweet potatoes?
You prepare them exactly like regular sweet potatoes and you can either top them with butter or sugar and cinnamon. They are very good and I heard they are healthier too?

We make roast beef in the crock pot a lot - just cut up whatever veggies you like, put them on the bottom, add the roast beef on top, then you can either put 1 cup of beef bouillon or you can use Lipton's onion soup according to the directions. Or substitute burgundy or another red wine for half the liquid. Yummy!

If I remember correctly, put raw potatoes in the gravy and leave for 15 or 20 minutes or so.  The potatoes will absorb some of the salt.  Good luck!

Mashed potatoes:
You have to mix in sour cream to stabilize the mashed potatoes or they will become watery. But twiced baked potatoes freeze amazing this way.

try this - whipping cream potatoes
One bag frozen shredded potatoes

1 pint whipping cream.

about 1 1/2 t. salt.

Dump potatoes in casserole. Mix with salt. Pour whipping cream overtop and bake for 60 minutes at 350 degrees.

Ham, baked potatoes, veggie.

How to keep baked potatoes hot out of the oven?
Our church is having a potluck Februrary 21 where the men prepare the main dishes . DH had decided to bring baked potatoes with all the toppings . He will probably bake about 40 potatoes . How can they be kept hot ? I thought of lining a roasting pan with towels & covering it with its lid . Any suggestions?

Wash and cut in half each potato. Wrap in aluminum foil and bake. Leave the foil on. They will stay hot about 2-3 hours out of the oven. I have used this recipe for 100 people. Put the toppings on ice! It is always a hit!
My family made home-made mozzarella,
and it was very good. I was pretty small at the time, so I don't remember the exact process, just that it was done pretty quickly, and a lot of milk was used.

I don't know if you'll save a lot of money making your own cheese. The cost of milk is very high, too, and you need a lot of milk to make cheese.

I haven't done much yet...

I pulled out some flowers that didn't make it to the end of the summer, but some of my annuals look better now than they did earlier so I hate to pull them.  We haven't had a frost yet, so most of my summer stuff looks great.  Once we have a frost, I will pull the annuals and plant my bulbs.


I am in Central PA, so yes the leaves are starting to turn.  They look so pretty.  Where are you?  Your pepper plant sounded interesting.  What kind of weather, growing zone do they like?


I haven't been through this, but...
A good rule of thumb in life is to (1) not worry about things for which you don't have all the information, and (2) not worry about things over which you have no control. You don't have all the information necessary at this point and you definitely don't have control over what's going on, so worrying is absolutely unproductive and is added stress that your baby doesn't need right now.

my parents and sister have had excellent results with theirs.  They both have big, strong dogs - a black lab and a border collie mixed with something big and long-legged - and they both trained very quickly and easily.

I haven't been there
personally but have a friend who visits it regularly. For her 13th birthday instead of getting presents for herself, she asked the girls she invited to bring a gift for an animal and then spent her birthday up there at the shelter playing with the animals.

I haven't, but need to.

I only have the one child, also, but a daughter, so I know the feeling of wanting to get that perfect gift for your "one and only."  She is four and wants everything, so I guess that makes it a little easier, since I can buy anything and it will be something that she wanted.   


Your son is going to be SO excited!  What a good mommy you are.

but just wanted to wish you well. It sounds like you are making the right decision. My husband's father is an alcoholic and from what I have heard (we have talked about it a lot) it is not pleasant for kids. You are making the right decision for them. My MIL did not do the same for her kids but my husband still wishes she had.

His father is still an alcoholic and now we face the difficult decision with his influence on our children. We make the tough decisions that we feel are best for our kids. It's our job as parents and we know it is the right thing to do, despite what others within the family may say, namely the alcoholic FIL and MIL who still stands by his side and takes the abuse.

but to answer your question, from what you're probably describing, she's always like that. I saw some of her jewelry on AI and one of the entertainmnet shows. Some of it's really nice and not overpriced from the pieces she had on.

but I have this recipe in my "To Try" files.  If the filets are really thin, I would grill them on an oiled sheet of aluminum foil. 


Ingredients
2 pounds flounder fish fillets 
1/2 cup olive oil 
1/4 cup lemon juice 
2 teaspoons salt 
1/2 teaspoon worcestershire sauce 
1/2 teaspoon cajun seasoning 


Directions
Arrange fish on a well-oiled grill.  Combine remaining ingredients and baste fish.  Grill, turning and basting occasionally, for 10 minutes per inch of thickness or until fish is flaky and no longer translucent in the center. 


Haven't you ever

Haven't you ever said something and after you said it you realized it didn't come out the way you meant it to and you wished you had never said it.  Men act first and think later most of the time.  My son is always teasing his wife, she wants to become a nurse practitioner and he always says he is going to retire when she gets her NP license.  He is kidding but if she was really touchy about it she would get mad.  He is an electrical contractor and makes alot of money but he still says he is going to retire and let her support him. 


Since this is a new relationship for you I would back off a little bit on paying for things.  Think of free stuff to do and spend more time with him getting to know him.  If he is looking for someone to pay the way he will be on his way and you will have your answer.

This is actually a sweet one-
My twin sister and I were adopted and from as early as I can remember we were told that we were special cause mommy and daddy got to choose us. For years I envisioned this baby store where parents would cruise up and down the aisles until they found the ones they wanted. And I always did feel special because of it.
Aw, how sweet.
On Father's day I called the house and mom answered, but I had a question about a gift I was getting Dad, so thankfully I thought to ask if Dad was right there too (couldn't tell if we were on speaker). Turned out he had also picked up, which surprised me so much that instead of wishing him a happy FD, I told him he needed to get off the phone! How wude!

I did see him later in the day and apologized, LOL.

sweet 16
My daughter is not studious but more of the artsy, eccentric type, but she did not want the big sweet 16 bash. Instead, she had a formal tea party at our house with 7 of her friends. They all wore fancy dresses, high heels. She filled the room with flowers, made little sandwiches, tea obviously, fancy desserts, tablecloths, doilies, etc. It was so over the top, it was funny rather than weird and geeky, and they had a blast! Later, just she and I went to NYC together and saw some plays, went shopping, did museums.

But this is a kid who shops at thrift stores and vintage shops and would not be caught dead in anything bought at a mall. So whatever is "in" is "out" for her.
Sweet 16
How about tickets to a concert by her favorite performer/group for both of them, rented limo to take them to a fancy dinner first?  Or, does she know her friend's family well?  If so, how about a dual party?  Just thinking out loud. It's a special day for her, one she ought to remember always.  My parents didn't have a lot of money, and my sweet 16 (a gazillion years ago) was just a house get-together with about 6 people, but it was fun because that special day was acknowledged.  I had a cousin whose sweet 16 was held in a nightclub.  Trini Lopez was performing there, and I saw Connie Stevens sitting at the next table!

I didn't want to post "little change in condition" but thank you for asking so I will post an update.  It is getting worse but not progressing as quickly as I thought it would back on Saturday.  I'm having to hand feed her and am trying to find goodies that will tempt her to eat.  I had some liquid pain medicine from before and so she was taking that in tuna water (which she used to love) but now won't even drink that so I can't get any pain medication in her.  She didn't sleep well last night.  She keeps looking at me and meowing and I wish I could speak cat.  The time is close I think.  I'll let you know when.
