and something called pecan tassies.....kind of like minature pecan pies, in small muffin pan, about 1.25 inch or so in diamter, yummy. Did 2 batches this morning after I finished the pie. Now unfortunately back to work as we are going away Saturday and I need to finish up about 150 minutes of work staring at me.

take your mix, add 1 can (i think 15 oz?) and one cup of water. Mix and bake as usual. This is an old Weight Watchers friendly recipe and is about 100 calories per serving, high in fiber and DELICIOUS. Make great cup cakes too.

Having our annual Super Bowl party
Just a few close friends. We're having pizza and chicken wings and my the neighbors bring over various dishes. One usually brings over a great hot chicken wig dip and my husband will make chilli in the crockpot. My friend and I just like to watch the commercials. LOL. After we eat and see the halftime show, the kids and women go across the street for our own party.

We have one every year. We're having about 15 friends over. Pizza, wings, assorted munchies and whatever dishes our friends decide to bring. It's a lot of fun even though I just watch the Super Bowl for the commercials, and the halftime show.

This year our batch was deemed excellent by all of our family and friends. For 2008, we're adding a touch of ginger and we'll see how it goes when we give bottles at Christmas. We fill and cork small 100 ml bottles and give them to family and friends every year.

Thanks for posting this. I'm going to try it, as I am always looking for recipes without eggs - my son is allergic to them. Recipes with pumpkin always seem to turn out the best and as you said - very moist.
Pumpkin pie
I was at the store the other day and they were baking pumpkin pies. It smelled sooo good. I've been dreaming about it ever since. If I make one I'll have to eat it by myself because no one else in the family likes them.
I love this time of year! It's cold outside, beef stew with corn muffins, football, pumpkin pie, the fireplace turned on. Just love it!

I have tried many and this is the one my family begs me to bring for the holidays. It is the best! I use a little more cinnamon and nutmeg than recipe calls for.
INGREDIENTS:
2 8 oz. packages (16 oz. total) cream cheese, softened
3/4 cup pumpkin purée
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon nutmeg
2 large eggs
1 9-inch graham cracker pie crust
PREPARATION:
Combine cream cheese, pumpkin, sugar, vanilla, and spices; mix with a hand mixer at medium speed until well blended. Add eggs; mix until blended. Pour into graham cracker crust. Bake at 350° F for 35 to 45 minutes, or until set. Cool. Refrigerate at least 3 hours, or overnight.
Serve with whipped topping.
This recipe is not over the top sweet so the whipped topping really compliments it perfectly.
You have to try it!

...Know how you feel. I too got very excited and committed this year to doing an organic garden. I had my husband make me three raised beds, bought tons of organic soil, organic seeds for pumpkins, squashes, cucumbers, tomatoes, carrots, you name it. I first read all the how to books on organic gardening. Everything was coming up beautifully - thick green vines for the pumpkins. Then in a flash, everything kind of shirveled up, got weird looking, and I wanted to cry. Turns out after much research on the net I find I had a destructive bug that infected all the squashes and pumpkins with bacterial wilt. I tried to save everything, but looks like I will only have two to four pumpkins this first year. What did I learn? I neglected to look up all the things that could go wrong - infectious virus, animals, bugs, sudden hot temperature, all the stuff that was not in the books I had bought. Now I am better armed, and next year, I will be well prepared for what can go wrong. Oh, there is a book you can buy on Amazon.com called How to Grow Pumpkins, and that book has everything. Don't give up, keep trying for next year. I know what you mean about spending a fortune to buy pumpkins. I do the same thing each year and had hoped I could save myself some money.

that's great that your niece is doing that. I'm sure everyone will tell her how perfect they are, even if they are terrible. lol My 10yo "made" the pies this year. I just supervised. I was quite surprised he wanted to help. He was hesitant on making the pie crust and kept wanting me to finish it for him but I stood ground and told him he couldn't possible mess it up and that I wouldn't have given him the option if I thought he would fail. He's very proud of the pies now that they are done. Even said he'd like to try the pumpkin this year! I dont' think he's ever had a bite of pumpkin before.

Cash N Carry - I have a pump on the bottle and put a couple of squirts in - I only like light flavored pumpkin - but you could adjust depending on your preference. I put it in the milk before heating otherwise it cools it down too quickly. Great - now you are making me crave one too!! :)
My pumpkins are gone! I planted 4 pumpkin seeds in March sm
which grew up really nice and started to grow out like vines - got pretty white flowers in them which means the pumpkins would be coming out in a few weeks.
I haven't checked up on them all week because we've had plenty of rain so I haven't had to water them. I go today with my big bucket of water and there was only dirt left with holes. They dug them up and ate EVERYTHING - the stalks, flowers, everything! I am really upset.
I have 3 boys - 2 little ones, and we live in the country. Every year I spend about 80.00 on pumpkins decorating our porch, land, etc with pumpkins. I though I'd be a little more economical and plant seeds in the spring which cost a dollar so that I could have nice, ripe pumpkins, as many as I wanted - for the fall.
I'm thinking rabbits got them. We have indoor cat/dog so it wasn't my animals. I'm not sure what to do next spring. I'm not giving up. How can I keep animals from getting to them like that???

I made them for dinner last night (and breakfast this morning too) and my very picky family absolutely loved them and how simple is that. Just mix the three together. I used a mini muffin pan. The are the most moist muffins I have ever had. Hope you enjoy and, again, they aren't too bad for you either.

So now that I have caught your attention...just what is a vinegar pie, you ask.
In the south, they are referred to as transparent pie. You will sometimes hear it called sweet and sour pie. It is good real cider vinegar, the kind with the mother at the bottom, brown sugar, white sugar, butter and eggs, a bit of flour. It is like water when you put in the shell. You bake it for an hour and it comes out about like the goo in a pecan pie with no nuts. It is not sour a bit, nor is it sickly sweet. It is sweet with a bit of an apple bite. The kids love it and when younger son is home for the holidays, he will devour one of them at a sitting. He literally comes in and sees the vinegar pie, takes one and says: So...what is everyone else having? The other son won't eat pumpkin or vinegar, so he has the chocolate chiffon. The rest of us are pumpkin eaters.
